Recipes by India Gate Quinoa

Tri-colour Quinoa bake- Dinner

Ingredients:
Quinoa- boiled- 400 GMs (g)
Pineapple chopped- 100-120 GMs (g)
Boiled Broccoli purée (with very little water same which was used to boil the broccoli)- 200 GMs (g)
Boiled Carrot purée- 200 GMs (g)
Mozzarella – 100 GMs (g)
Cheddar- 100 GMs (g)

Method:
Mix the chopped pineapple into the quinoa with some salt and a little bit of pepper (optional).
Grease a baking dish lightly with butter and Layer with half the quinoa and pineapple mixture.
Mix 1/3 rd cheese in the carrot and broccoli purée each and reserve the rest.
Spoon the broccoli mixture on top of the quinoa mixture, then the remaining quinoa on top, then the carrot mixture and finally top with remaining cheese.
Bake it in a hot oven at about 200 degrees c (°C ) till warm through and the cheese gets a nice color on top. About 15-20 minutes

Quinoa pancakes

Ingredients
Quinoa flour 1/2 cup
Baking powder- 1 tsp
Almond powder- 2 tbsps
Corn flour- 1 to 1 1/2 tbsps
Vanilla extract- 1/2 tsp
Milk- ¼ cup
Egg- 1
Honey- 1 tbsp

Method:
Sieve together dry ingredients.
Whisk in milk, vanilla, honey and egg yolk.
Fold in the dry ingredients and make a batter which is not too thick or thin.
Make pancakes on a slow flame without butter.
Lightly grease and wipe the pan from time to time.
Serve with maple syrup, chocolate sauce or freshly whipped cream.
